The Story of the Stems (Kuki)
Unlike traditional green tea, which uses the leaves, Bo Hojicha is crafted from the stems (stalks) of the tea plant. Historically, these stems were separated to protect the delicate leaves, but the people of Kanazawa discovered that roasting them created a remarkably smooth, toasted aroma with naturally low caffeine. It is a sustainable tradition born from a respect for every part of the plant.
